You update ElvUI Classic the same way you update retail ElvUI.

Elv User Interface (ElvUI) provides a comprehensive, efficient, and fully customizable user interface replacement for World of Warcraft. In order to manually download ElvUI you can either click the "Download ElvUI " button in the middle of the website, or click on "Addons" in the top navigation bar of the website, then click ElvUI and choose between "Download (Retail)" or "Download (Classic)" where retail means BfA / Shadowlands and classic means WoW: Classic. Manually, if you want to keep your settings, just replace the ElvUI folder in the addons folder. It's Tukui Client, and it has worked flawlessly or me. 
ElvUI uses their own client for ease of updating, and doesn't have a shitload of adds or takes forever on startup. The default color in ElvUI has been changed to match the new logo. The ElvUI logo has been updated with design by RZ_Digital. You can manually input a value higher than the slider allows.
